Ice cream and bear cookies

Made these cookies last month. Initial plan was to make fancy ice cream cookies, but Nuha wanted some bear cookies as well. So, I made both using the recipe that I had earlier posted and had doubled the ingredients used.


Both Faiz and Nuha helped in making the cookies. I also let them sprinkled the decoration, i.e. the sugar stars and sugar balls, although I am pretty sure that most of the sugar decorations ended up in Nuha's mouth rather than on the cookies.

Chocolate chips cookie dough (for the freezer)

I made cookie dough a few weeks back to freeze. They are delicious and the smell of these cookies were so good, love how lovely the home smell when baking them. Original recipe taken from King Arthur Flour's website.


2/3 cup brown sugar, firmly packed
2/3 cup sugar
1/2 cup butter
1/2 cup shortening
1/2 teaspoon salt
2 teaspoons vanilla essence
1 teaspoon apple cider vinegar
1 teaspoon baking soda
1 large egg
2 cups all purpose flour
2 cups semi-sweet chocolate chips

In a bowl, beat in the sugars, butter, shortening, salt, vanilla essence, vinegar and baking soda until smooth and creamy. Add in the egg, followed by flour and chocolate chips until well incorporated.

To freeze, scoop the cookie dough using a small ice cream scoop onto a baking sheet. 


Freeze till the scooped cookie dough are frozen solid. Once frozen, transfer to a zip lock bag, label and return to the freezer.





To bake, preheat the oven to 190 degree Celsius. Take the number of cookie dough needed out of the freezer and put them on a baking sheet (remember to spread them a little). There's no need to thaw the cookie dough.


Bake for about 8 to 10 minutes depending on the size of your cookie dough (I baked mine for 8 minutes). 


Enjoy fresh warm cookie anytime :)

Chocolate chip cookies - remake



Made this last Thursday whilst the older 2 were in school. Nuha was fast asleep and she woke up right after I'm done making the cookies.

I used the same recipe that I previously used (really love this recipe!), recipe can be found here. This time around, I added in some melted chocolate to the ingredients. Love the result, absolutely delicious!

Fancy ice cream cookies



Me and the kids spent our Wednesday evening making these cookies. The kids really enjoyed themselves, as I let them decorate the cookies to their liking using sugar stars and sugar balls. I actually wanted to make chocolate chip cookies as per the one I recently made since the earlier batch lasted for less than 2 days, but I guess that can wait since the kids seem overly excited when I told them that we're gonna be making cookies in the shape of an ice cream.





They loved the cookies very much, and the cookies were gone in less than a day!

Here's the recipe that I used to make them, I've made slight changes to the amount of ingredients used as the dough feels too soft to roll-out. Original recipe can be found here.

Ingredients:
130 grams butter
60 grams icing sugar
160 grams all purpose flour
30 grams corn flour
20 grams potato flour/starch
20 grams custard flour
1/4 teaspoon baking powder
20 grams ground almond

Dark compound chocolate - melted, and sugar stars/balls/crystals etc for decoration

  1. In a mixer, beat the butter and icing sugar until fluffy. 
  2. Add in the rest of the ingredients (flour, baking powder and ground almond) a little at a time on low speed until well incorporated.
  3. Using a rolling pin, roll-out the dough. Then, cut out the cookies using cookie cutter.
  4. Preheat the oven to 160 degree celcius and bake the cookies for 20 minutes.
  5. Decorate as desired using the melted chocolate and the sugar stars/balls/crystals etc.

Chocolate chips cookie recipe

So I kept the promise I made to my kids and we spent our Saturday evening making cookies. Amirul and Faiz both enjoyed helping me making the drop cookies.




I used a different chocolate chips cookie recipe this time around, which I happened to come across the other day whilst surfing the net.

I had however changed the temperature used for baking as there was comment made by a reader asking on why the bottom of her cookies got burnt quite fast. I had also substituted the almond nibs with ground almonds. Original recipe for the cookie can be found here.

Here's the recipe that I used:

Ingredients:
250 grams butter
120 grams sugar
100 grams brown sugar
2 eggs, lightly bitten
320 grams flour
80 grams corn flour
1/4 teaspoon baking soda
2 tablespoons cocoa powder
100 grams ground almonds
250 grams chocolate chips

Preheat oven to 160 degree celcius.
Beat the butter, sugar and brown sugar until creamy.
Add in the beaten eggs and beat well.
Mix together the flour, corn flour, baking soda and cocoa powder.
Finally, add in the ground almonds and chocolate chips.
Drop the cookie dough a teaspoon at a time onto a baking sheet.
Bake for about 24 minutes.




This recipe yields crunchy chocolate chips cookie like the one bought from famous amos, not the soft chewy type like the one from subway. My kids loved the cookies made, and we liked the cookies too.  My 2 years old daughter said "mmmm, yummy cookie" a few times when eating the cookies.

This recipe is a sure keeper!

Alhamdulillah, still ada order received for raya cookies. 1 biskut snow almond dan 1 biskut semperit pandan.


Ordered by my mum's friend, she requested me to tie ribbons to the cookie boxes. Cookies to be delivered tomorrow.

Chocolate chips and cranberries cookie recipe



Apart from the earlier cookies made for raya, I also baked chocolate chips cookies for the kids. 

The recipe used is actually a newly invented one, as follows:

150g of butter
1/2 cup of sugar
1/4 cup of brown sugar
1 tsp of vanilla essence
1 egg
2 tbs of cocoa powder
1 cup of flour
3/4 cup of self-raising flour
1/2 cup of chocolate chips
1/2 cup of dried cranberries

Cream the butter, sugar, brown sugar and vanilla essence. Add in the egg, followed by cocoa powder, flour and self-raising flour. Finally add in the chocolate chips and cranberries.

Drop the cookie mixture 1 tsp at a time onto the cookie/baking sheet. Bake at 160 degree celcius for about 16 minutes.


Note to myself:
Cookie tasted okay and the kids loved it. The texture is also perfect to my liking. However, in future, I will definitely add in more cocoa powder as I like my choc chips cookie darker, with more chocolate flavor.

Apam polkadot - repeat order from a customer

I've made and delivered 20 pieces of apam polkadot to a customer last Friday,  and on Sunday, she ordered another 4 x 20 pieces,  to be delivered by today.


40 pieces with blueberry filling, 20 pieces with kaya filling and 20 pieces with chocolate chips

My first few orders

I've received quite a number of orders and spent the whole weekend baking cookies. Alhamdulillah for the order received.

I still have a few more boxes of cookies to prepare and deliver by tomorrow. Thanks so much for the orders and thank you to those who helped bringing in the orders!!

Apart from that,  I also received an order for 20 pieces of apam polkadot.

Biskut raya 2012

In my first week of being a stay at home mom, I've made cakes and apam polkadot for iftar, cooked almost every day for the family, made cookies for sampling and a lot of other little things that I previously not able to accomplish due to the time constraint. Most importantly, we have managed to change our little daughter's sleep pattern. It is now back to normal and she now sleeps through the night, alhamdulillah.

For raya cookies, I'm starting off with just 3 type of cookies for the time being.

Nestum cookies (biskut nestum) - RM21 for 50 pieces:

Green lace cookies (biskut semperit pandan) - RM22 for 50 pieces

Snow almond cookies (biskut snow almond) - RM24 for 45 pieces

Snow almond cookies

I made snow almond cookies last weekend. First try as I've never made this cookie before. They are delicious. I will eat one or two everyday after work, really can't resist eating it. I ate quite a number today, since I'm at home.



Amirul and Faiz helped me to make the cookies. They love helping me out in the kitchen, especially when it comes to baking cakes and cookies.



Baking the cookies very much reminds me of all those times spent preparing for eid where my mum, me and my siblings will spent hours making raya cookies.

Those days, our oven was different from the one that I have now. Ours was the gas type, where we have to turn on at least half an hour prior to baking so that the temperature will be right. We had to then control the flame to increase or lower the temperature.

My mum will then prepare the cookie dough and we will then get to play with all sorts of cookie cutters. When I grew older, I took over the task from my mum, and my 2 sisters never failed to help.

We don't have that many baking pan as well. So, we end up baking the cookies using cooking pot covers in replace of baking pans.

And since we normally baked during ramadhan, cookies will be the first food that will be tasted during iftar, after whole day of fasting and serious baking.

Missing those enjoyable moments..

Biskut raya 2011 - part 2 (chocolate chips cookies)

Made these cookies last Thursday, after work. Resipi dapat dari myresipi.com




I used small ice-cream scoop untuk dapat biskut yang lebih kurang sama saiznya. Tapi, kena penyekkan cookie dough tu sebelum dibakar untuk dapat biskut yang agak leper, or else, dia akan jadi gemuk-gemuk.



Sekali bakar dapat 12 biji biskut je sebab saiz biskut ni yang agak besar. Me and my hubby loves these cookies, but the kids don't like it because it contains almonds.

Biskut raya 2011 - part 1 (biskut cornflakes)

This time, buat 2 adunan biskut, dapatlah dalam 180 biji.... 






Still in the opinion that this is the simplest cookies ever!!

Kuih raya 2010 - biskut cornflakes

I's a bit too late to post this entry... but anyway.....



Mula-mula memang takde niat pun nak buat kuih raya tahun nih. Tapi sebab dah lama tak buat cookie ngan anak2, sian pulak kalau tak buat kuih raya tahun nih.

So, a couple of days before raya, Shas cari resipi kuih raya yang simple untuk buat ngan Amirul dan Faiz. Diorang tolong susun baking cup dalam dulang, then tolong masukkan cookie dough dalam baking cup tu. 

Lepas siap bakar, tak sabar-sabar diorang nak rasa cookie yang diorang buat tu.



Overall, cookie nih senang je nak buat, rangup dan sedap. 

Resipi untuk biskut cornflakes nih Shas dapat dari myresipi.com, tapi Shas ganti ceri ngan mix fruits.


Biskut cornflakes:


250 g butter
1/2 cawan gula
2 1/2 cawan tepung naik sendiri
2 cawan cornflakes, diramas sedikit
mix fruits


Pukul butter dan gula sehingga kembang. Masukkan tepung, cornflakes dan mix fruits. Sudukan dalam baking cup dan bakar sehingga masak (suhu lebih kurang 160 darjah celcius).

Double chocolate mint cookies

I've been wanting to try out this recipe for so long, double chocolate mint cookies shared by Gina of Kitchen Capers. Here's the source of the recipe: mycakedecoclub forum.

I've pasted the recipe shared by Gina, as follows:

Ingredients:
115 g salted butter
180 g self raising flour
1 tbsp cocoa powder
80 g castor sugar
50 g light brown sugar
1 egg, beaten
1 tube of Polo Mints
1 cup of chocolate chips


Methods:
1. Crush Polo mints in a bag, set aside
2. Cream butter, sugar in a mixer till creamy.
3. Add egg to beat till well mixed.
4. Turn off mixer and fold in flour, cocoa powder, chocolate chips and crushed mint.
5. Lined a baking tray with baking paper.
6. Use a piped bag to squeeze out tiny spots on the paper.
7. Bake in preheated oven 180 for 15 mins.
8. Remove and cool completely on wire rack.

I've taken some pictures of the cookies, but it doesn't look as nice as the one baked by Gina.



But the kids loved them anyway (since the get to "help-out" in making the cookies).


Thanks Gina for sharing the recipe. The cookies were yummy, but found it to be slightly on the sweet side, maybe because of the type of chocolate chips that I used. Next time, will reduce the sugar, add a little bit more butter and double the amount of Polo mints.

Raya cookies - biskut dahlia



Most of my raya cookies were from a set of cookie books, which belongs to my mum. However, when we moved to a different house a few years back, I couldn't locate them anymore. I don't remember whether did I I lent it to someone, or did I just misplaced them.

So, I started searching for recipes for the above cookies. Been trying a few recipes since then, about 4 to 5 recipes, sebab nak dapatkan biskut yang sedap dan peroi (did I use the correct word here?). Satu daripada resipi yang I dapat from internet don't even work at all, bila dah campur semua bahan2, adunan masih bertepung (macam tepung lepas mix dengan butter jer), tried to save it by mixing in some water as we are out of fresh milk, but the end result - melekit semacam, and I had to throw the whole thing away, what a waste :(

But of course, I can never give up. Subsequent to that, I tried another recipe from the internet.
I didn't credit the recipe owner though as I found the same recipe over a few websites, and I don't know who's the original owner. However, I have to change some of the measurement for the ingredients, and the type of ingredients used as well - so that I can get a good consistency for piping. And the result, yummy dahlia cookies. Delicious, has a good texture and even melt in the mouth.

So for those who wanted to try, here's the recipe, and do let me know your opinion. Enjoy!

7 oz butter
4 oz gula icing
(pukul butter dan gula icing, tapi jangan sampai terlalu kembang)

1 sudu kecil esen vanilla
1 biji telur sederhana besar
(campurkan esen vanilla pada adunan, then mix in the egg)

8 oz tepung gandum
3 oz tepung kastad
1.5 oz tepung jagung
(ayak tepung2 dan campur ke dalam adunan)

Bentukkan adunan menggunakan piping bag dan open star nozzle. Hias dengan ceri atau silver sugar beads. Bakar pada suhu 170C (fan assisted oven) lebih kurang 8 hingga 12 minit.
